Ouzo is a traditional Greek spirit produced through a double distillation process. Since 1856, in Tirnavos, Katsaros has been using premium grain alcohol, redistilled with star anise, wild fennel, and other aromatic herbs typical of the region. The second distillation takes place slowly in ancient copper stills, following a method passed down through generations. The "louche" phenomenon is distinctive: when water is added, the anise's essential oils create a characteristic milky opalescence. On the nose, intense anise notes dominate, with an undertone of Mediterranean herbs. On the palate, it is smooth and complex, with a balance of sweetness and spicy notes that culminates in a dry, lingering, bittersweet finish.
