Touma & Frères is one of Lebanon's oldest distilleries, founded in 1888 in Zahlé, a city known as the "pearl of Lebanon" and traditionally considered the center of local arak production. The arak production process follows an ancestral method passed down through generations, beginning with the distillation of local wine, obtained primarily from Obeidi and Merwah grapes, native Lebanese varieties. Syrian green anise seeds are added during the second or third distillation (which takes place in copper stills, followed by a period of maturation in clay jars). When served according to Lebanese tradition (diluted with water and ice), the spirit develops the characteristic milky haze known as the "louche effect," revealing complex aromas of anise, Mediterranean herbs, and a distinctive freshness.
