Amber in color with coppery highlights, it presents an extraordinarily complex bouquet of ripe red fruit, raspberry, and wild strawberries, with notes of honey, sweet spices, and a delicate balsamic touch. On the palate, it is sweet and elegant, with a vibrant freshness that perfectly balances the sugar concentration. The finish is extremely long and persistent. Excellent paired with all types of dry pastries or exotic fruits, it is delicious on ice cream.
Willi Opitz, an internationally renowned winemaker based in the Neusiedlersee (Lake Neusiedl) region of eastern Burgenland, is considered one of the masters of producing ice-cured wines. This 2005 Eiswein, an exceptional vintage, is made from Pinot Noir grapes left on the vine until the first winter frosts, when temperatures drop below -7°C. At this temperature, the water in the grapes freezes, while the sugars, acids, and aromas remain in a concentrated liquid state. The grapes are harvested and pressed while still frozen, yielding an extremely concentrated must that ferments very slowly due to the high sugar concentration. The unique nature of an Eiswein made from Pinot Noir, a red grape, makes this wine a rarity in the global wine scene.
