Description:
A deep amber color with golden highlights, it offers a rich and complex bouquet of dried apricots, honey, figs, and almonds, with notes of candied citrus and a delicate touch of Mediterranean herbs. On the palate, it is sweet and enveloping, with an extraordinary aromatic complexity supported by a fresh acidity that prevents cloying. The finish is extremely long and persistent. This rare Calabrian passito is perfect with traditional Southern Italian dry pastries, such as bocconotti calabresi, mustaccioli, and susumelle. It pairs beautifully with local aged cheeses, particularly Caciocavallo Silano and Ricotta infornata. A typical regional pairing is with dried figs stuffed with walnuts and almonds.
Moscato di Saracena is one of Italy's oldest and most prized passito wines, produced since the time of Magna Graecia using a unique method passed down through generations. Feudo dei Sanseverino produces this wine using the ancient "governo" technique: the Guarnaccia and Malvasia grapes are harvested in late August and left to dry in the sun; then, in October, the Moscatello di Saracena grapes (a nearly extinct local variety) are harvested and added to the must from the first two grapes. This technique, similar to the "Tuscan governo" but applied to sweet wines, gives the wine extraordinary aromatic complexity. The must ferments slowly in terracotta containers and ages for at least 12 months before being released for sale.
