The Pays d'Auge, home to the house founded in 1825 by Pierre-Auguste Boulard, is the most prestigious area for the production of this spirit: here, the apples benefit from a unique terroir, characterized by clay-limestone soils and a particular climate influenced by both the Atlantic and the English Channel. A distinctive feature of Boulard's production is the selection of over 120 different varieties of cider apples, classified into four categories: sweet, bittersweet, bitter, and tart, a complex blend that gives the final product a unique aromatic depth. The apples are hand-picked and left to ripen on straw before pressing. The resulting cider ferments naturally for approximately six months before distillation, which, as required by the Pays d'Auge appellation, occurs in a double pass in copper stills (à repasse), a more time-consuming and costly process than a single distillation, but one that yields a finer and more elegant spirit. The aging takes place in French oak barrels of various ages, some of which are centuries old, under the supervision of the Maître de Chai.
