Description:

A deep gold color with amber highlights, it offers a rich and enveloping bouquet of ripe apricot, raisins, and acacia honey, with notes of candied citrus and a touch of ginger and spice on the finish. On the palate, it is sweet and velvety, with a vibrant freshness that counterpoints the high sugar concentration, resulting in a long and persistent finish. Excellent with gelato, even as a ripple, or with all dry pastries.

Canada is one of the leading icewine producing countries, thanks to its particularly suitable climate with harsh, dry winters, and the Lake Erie North Shore region, in southwestern Ontario, is one of the most suitable areas for this type of production. Vidal, a French-American hybrid, is the most widely used grape variety for Canadian icewine due to its resistance to cold and its ability to maintain acidity even with high sugar levels.

The grapes are left on the vine until the temperature drops below -8°C, generally between December and January. Harvesting takes place at night, when temperatures are lower, and the grapes are pressed while still frozen, yielding an extremely concentrated must. The VQA (Vintners Quality Alliance) designation guarantees high quality standards and compliance with the rigorous Canadian regulations for ice wine production.
