Mexican tequila made with 100% blue agave from the Jalisco region, the heart of the world's blue agave production, aged for three months in ex-bourbon American oak barrels, giving it its signature vanilla and caramel notes. The name is inspired by the "cenotes," the sacred Mayan wells, natural formations of crystalline water filtered through limestone. Similarly, the water used in production is naturally filtered through layers of local limestone. The blue agave is cultivated for 7-8 years before harvest and traditionally cooked in stone ovens (hornos) for 35 hours. Fermentation occurs with selected yeasts in stainless steel vats.
