Description:
In the glass, it displays an intense ruby red color with purple highlights and a purple mousse. The nose is full and harmonious, with hints of fresh undergrowth that immediately capture the attention. On the palate, it is soft and enveloping, with the pulpiness of the fruit and an elegantly tannic finish that balances the residual sweetness. Grasparossa di Castelvetro stands out from other Lambruscos for being more structured and smooth, with lower acidity and distinct fruity notes.
The 1928 line embodies the essence of the Cavicchioli experience: a Lambrusco that keeps alive the family tradition begun in 1928, a symbol of the most authentic and convivial Emilian spirit. Vinification involves cold maceration of the grapes at low temperatures for 2-3 days, alcoholic fermentation for 10-15 days at 15-18°C, followed by a Charmat refermentation for 4 weeks at a controlled temperature.
