Description:
Intense ruby red with a compact purple-violet mousse, the nose offers a rich bouquet of ripe red fruits, particularly wild blackberries, blueberries, and black cherries, with spicy nuances and a hint of violet. On the palate, it is fresh and structured, savory, with a pleasant effervescence that balances the light tannins. The finish is persistent with a return of red fruits and an almond note typical of the grape variety.
Cantina Ceci, founded in 1938 in the Parma area, is one of the most innovative wineries in Emilia, including its bottle design. Vinification involves a brief maceration on the skins followed by secondary fermentation in an autoclave using the Martinotti method at a controlled temperature, which preserves the grape's primary aromas while developing a fine and persistent mousse.
