Description:
Hazy straw yellow with light effervescence and the presence of sediment from secondary fermentation in the bottle. The nose reveals notes of citrus, green apple, and yeast, with hints of aromatic herbs and a light minerality. On the palate, it is dry and vibrant, with fine bubbles that enhance its natural freshness and savory character. The finish is lingering and clean, with a rustic, authentic character and a distinctive almond aftertaste. Perfect with Piacenza cured meats such as coppa, pancetta, and salami. It pairs excellently with traditional Emilian pasta dishes, especially tortelli d'erbetta and pisarei e fasö. It is also ideal with fried vegetables and fish, shrimp and zucchini risotto, or soft cheeses. Its freshness also makes it a perfect aperitif.
Massimiliano Croci, an artisanal winemaker from the Arda Valley, produces this wine using traditional methods from the Piacenza area. The Ortrugo grapes, a native grape variety currently being rediscovered, are hand-picked from vineyards located on the clay hills of Castell'Arquato. After harvest, the grapes ferment spontaneously in concrete tanks with maceration on the skins for approximately 15 days, which gives the wine greater structure and aromatic complexity. As winter temperatures drop, the natural cold interrupts fermentation while fermentable sugars are still present. The wine is bottled immediately, and as spring temperatures rise, fermentation resumes for the secondary fermentation. Disgorging is not performed, thus preserving the lees in the bottle.
