Description:

A beautiful summery golden yellow, with fine perlage in the glass, it strikes the nose with fruity nuances, especially green apple and citrus peel, and an undertone of wet stone, while on the palate it is elegant, delicate, medium-bodied and medium acidity, velvety and with a long, linear finish.

2017 was the first year of production for this cuvée, sourced from four of their Premier Cru vineyards in the Côte des Blancs, including the historic Chaffour planted in 1953. Without malolactic fermentation and in stainless steel, it spends four years on indigenous yeasts, after which it undergoes manual riddling. Pure and energetic, it lends itself to a good decade of aging and is excellent not only with seafood, fatty fish, and fish risotto, but also with pork and cream pastries.
