Description:
In the glass, it displays an intense straw yellow, suggesting the presence of a "veil of flor" protecting it from oxidation, although it is not officially labeled "vin jaune" (the typical "yellow wine" of the Jura). On the nose, the predominant hazelnut aroma (also characteristic of "yellow wines") blends with those of green olive, lemon, and fresh almond. The aromatic impact of the yeast, muted compared to what the nose suggests, is very pleasant on the palate. Overall, a wine of great freshness, savory flavor, and persistence, perfect for pairing with spicy and savory dishes such as lamb, chicken curry, or fish couscous.
César and Jean-Baptiste Deriaux, the fourth generation to manage the 11 hectares of vineyards nestled in forests and scrubland, following in the footsteps of their mother Nicole, have modernized the winery with complete respect for the terroir and natural winemaking processes, so much so that it is now officially in the process of converting to organic farming.
