Description:
It features an amber pink color with a very fine perlage and an extremely delicate effervescence. It opens with a bouquet of rare power, with notes of fruit, hazelnuts, and pronounced mineral hints of silica, lime blossom, honey, and golden bread. On the palate, it is equally rich, with the fruitiness emerging in more specific notes of pear, peach, and currant. The minerality is perfectly balanced with the pleasant acidity (thanks in part to the careful malolactic fermentation), and the finish is long and equally pleasant. Excellent with red meats and game, it also pairs beautifully with cured meats and aged cheeses.
The blend of grapes, both obtained from old vineyards, the very long processing in the cellar, as well as the use of the same 4000 kg Darcq-Flamain press used since the maison's foundation in 1888, demonstrate the family vocation for viticulture and the territorial identity of the Desruets domain, resulting in a champagne of great depth and notable personality.
