Description:
It presents its characteristic, highly distinctive, pale amber color (not for nothing a "vin jaune," or yellow wine, from the Jura), with an equally characteristic and persistent hazelnut aroma. It then opens with a riot of aromas ranging from ripe yellow fruits to a broad and bold spice, primarily saffron and curry, but also mixed citrus along with oxidized and iodine notes. On the palate, it is dry, crisp, and so fresh that it makes you forget its structure (and the alcohol content, which sometimes reaches 15.5%).
This is a wine with a very long tradition, whose distinctive character is the result of a series of essential factors: from the marly-limestone soil of Jurassic origin, to the grape variety, from the Traminer family, and its specific and unusual oxidation in the continental climate of the Jura, up to the aging in cellars where the climatic changes contribute to the formation of a veil of flor that blocks oxidation when it is time to let the aromatic structure mature.
Unusually for a white wine, it is best served at room temperature and paired with aged cheeses, such as, ideally, Comté, the undisputed king of the Jura cheese scene, Parmigiano Reggiano, and Gorgonzola. It is sold in its 62cl clavelin bottle, the exact amount of liquid remaining from a liter of Château-Chalon after over six years of aging, and in which it is said it can age for over 100 years.
