Description:

With a pale ruby ​​red color, typical of Jura red wines, it offers a delicate bouquet of fresh red fruits, spicy notes, and a characteristic hint of undergrowth. On the palate, it is refined and elegant, with a lovely freshness and delicate tannins. Delicious paired with venison and game, mushrooms, cured meats, and fresh or medium-aged cheeses.

Jean-Luc Mouillard and his family manage 11 hectares of vineyards spread across three appellations—this one, Château-Chalon, and L'Etoile—on three soil types: clay, marl, and limestone. Always committed to integrated pest management, Mouillard obtained organic certification in 2020. Traditional Jura winemaking involves spontaneous fermentation and aging in old oak barrels, respecting the region's ancient traditions.
