Bright straw yellow in color, it presents a subtle blend of iconic Rhone Valley varietals on the nose, revealing floral and fruity aromas with a distinctive, refreshing citrus note. On the palate, it is fresh and mineral, elegant and balanced, with good structure and a clean, lively finish. It pairs excellently as an aperitif, with Thai crevette salad, filet de cabillaud à l'estragon, traditional blanquette de veau, fresh cheeses, grilled fish, and shellfish. It also pairs perfectly with Provençal specialties and delicate dishes.

Parallèle 45 Blanc shares the same philosophy as its namesake red, taking its name from the 45th parallel that runs through France, passing near the cellars of Maison Paul Jaboulet Aîné. This too is a classic celebrated worldwide since 1950. The grapes come from certified organic vineyards, typical of the Rhône Valley, planted on calcareous-clay soils and alluvial deposits. The grapes are harvested by hand at full maturity and pressed directly in whole bunches. The wine ferments at low temperatures for two weeks in temperature-controlled tanks to preserve its full aromatic potential. Aged for six months in stainless steel tanks and truncated cone-shaped vats on fine lees, imparting complexity and structure without weighing down the aromatic profile.
