Description:
Intense straw yellow in color with golden highlights, it features a fine and persistent perlage that demonstrates the quality of the secondary fermentation. The nose is fresh and mineral, with elegant aromas of quince, candied citrus, and delicate floral notes that evolve into nuances of bread crust and yeast. On the palate, it is creamy and balanced, characterized by a pronounced minerality typical of the Loire's limestone soils. The structure is full and enveloping, with a lively acidity that supports the freshness and a long, savory finish with notes of yellow fruit and hints of honey. Excellent as an aperitif, it pairs magnificently with oysters and raw seafood, fish dishes, pumpkin tortelli alla Mantovana, truffle risotto, or snails à la bourguignonne.
Damien Pinon represents one of the Loire Valley's most respected estates, cultivating Chenin Blanc vineyards with an average age of 30 years, planted on clay-limestone soils in Vernou-sur-Brenne. The winery adopts sustainable practices, including spring tillage of the under-row vines and permanent grassing between the rows. Vinification involves gentle pressing and static decantation, followed by initial fermentation in stainless steel with indigenous yeasts without added sulfites, followed by secondary fermentation in the bottle without dosage (Brut de Brut) of the residual sugars. Aging on the lees continues for at least 36 months in traditional tuff caves carved into the rock, giving the wine complexity, creaminess, and a unique character that best expresses the Loire Valley terroir.
