Description:
It features a very bright golden yellow color with a fine, long-lasting perlage. On the nose, it releases a broad and refined bouquet that combines hints of hawthorn and acacia honey with fruity notes of quince, along with a lovely savory minerality and a well-balanced, persistent freshness. It pairs perfectly with seafood risottos, vegetable-based first courses, and fried and grilled fish.
A Champagne crafted with care not so much to reproduce the same blend each vintage, but rather to create the best blend of the grapes harvested that year (blended with reserve wines when necessary) in the geological mosaic that is the Marne Valley: each of the traditional Champagne grape varieties is grown on the most suitable slope and soil, as the estate owns hectares on both sides (Pinot Noir planted in the chalkiest and clayiest areas of Mareuil-sur-Aÿ, Pinot Meunier on the clayiest slope of Festigny, and Chardonnay on the chalkiest and most sheltered section of Les Valnons in Aÿ and Les Fourches in Tauxiéres). Vinified in small stainless steel tanks and oak barrels, it is then left to age for at least 24 months on indigenous yeasts before the final dosage of 2g/l.
