Description:
In the glass, it appears a deep straw yellow with a fine and persistent perlage. The nose is dominated by fruity notes of white peach and white flowers, especially hawthorn and clove. Smooth on the palate, it captivates with its freshness and vivacity. Ideal with fish and shellfish dishes, it pairs well with fresh cheese platters.
This classic method sparkling wine, created in 1531 by the monks of the Abbey of Saint-Hilaire in Limoux, within the boundaries of the homonymous appellation of origin, is made from the Mauzac grape, also known as Blanquette due to the white color of the vine leaves, to which very small percentages of Chardonnay and Chenin Blanc are added. It ages on the lees for nine months.
