Bright golden yellow in color, it features a fine and persistent mousse and opens on the nose with a rich and complex bouquet that ranges from fruity aromas of quince, apricot, and ripe pear to delicate floral notes of acacia, enriched with nuances of white honey and a distinctive flint finish that lends minerality and territoriality. On the palate, it is rich, with a full-bodied entry that develops with great complexity, supported by a vibrant acidity that perfectly balances the structure and provides momentum and persistence. The finish is very long, mineral, and elegant, with echoes of ripe fruit and balsamic notes. Exceptional with vegetable and legume meatballs, snails in sauce, sophisticated white meats, and black truffle crostini.
A limited-edition cuvée from the 2016 vintage produced by Damien Pinon, the fruit of the passion and experience of three generations of winemakers in the heart of the Loire. This Brut Nature classic method is made from Chenin Blanc grapes harvested at perfect ripeness and vinified without any dosage. The distinctive feature of this sparkling wine lies in its lengthy 60-month aging on the lees in historic Tuffeau caves, the limestone rocks that characterize the area. Vinification follows the traditional method with secondary fermentation in the bottle, allowing time to express the full complexity of Chenin Blanc in this sparkling wine.
