Description:
In the glass, it displays an intense gold color with amber hues. The nose is a mosaic of aromas ranging from floral notes of jasmine and lime blossom to hints of ripe pear, quince, and wildflower honey. With oxygenation, nuances of chamomile, candied ginger, and a touch of beeswax emerge. On the palate, it has a silky and enveloping texture, where the delicate tannins resulting from maceration on the skins integrate perfectly with a lively acidity. The palate is dominated by flavors of yellow-fleshed fruit, aromatic herbs, and a delicate note of dried fruit. The finish is long and complex, with an interesting evolution toward spicy notes and a lingering mineral aftertaste. It lends itself well to serving with the traditional Georgian chicken in walnut sauce, Satsivi, but also with grilled blue fish, medium-aged cheeses, legume soups, and mushroom dishes.
Pheasant's Tears – named after a Georgian saying that only the best wines are good enough to make a pheasant cry – was founded in 2007 by American painter John Wurdeman and Georgian winemaker Gela Patalishvili, with the aim of reviving Georgia's 8,000-year-old winemaking tradition. Production is based on the use of qvevri, the traditional buried clay amphorae used for fermentation and aging, and on organic and biodynamic viticulture methods, respecting the lunar cycles and using only natural preparations to care for the vines (some of which are centuries-old).
