Description:

A deep amber color with orange highlights, typical of traditional Georgian wines, its bouquet opens with notes of dried apricot, candied orange peel, and black tea, leading to more complex aromas of walnut, chestnut honey, and exotic spices, with a mineral undertone and a light touch of tannins from maceration on the skins. On the palate, it is structured and surprisingly dry, with a texture reminiscent of black tea. The palate is rich in flavors ranging from dried fruit to aromatic herbs, with a pronounced savory component and a slight astringency that lends character and longevity. The finish is long and persistent, with notes of exotic fruit, spices, and a distinctive touch of umami, making it excellent paired with khachapuri, the traditional Georgian bread filled with cheese, aged and spicy cheeses in general, vegetable or chicken curries, and smoked fish dishes.

Pheasant's Tears—named after a Georgian saying that only the best wines are good enough to make a pheasant cry—was founded in 2007 by American painter John Wurdeman and Georgian winemaker Gela Patalishvili, with the goal of reviving Georgia's 8,000-year-old winemaking tradition. Production is based on the use of qvevri, the traditional underground clay amphorae used for fermentation and aging, and on organic and biodynamic viticulture methods, respecting lunar cycles and using only natural preparations to care for the vines (some of which are centuries-old). The Tibaani vineyards, located in the Kakheti region at 800 meters above sea level, are characterized by clay soils rich in limestone and minerals, which give the wines their distinctive minerality.
