Description:

It has an almost impenetrable purple-red color, typical of the Saperavi grape, unique in the world for its grapes with red flesh and skin. On the nose, notes of wild blackberry and ripe plum blend with hints of oriental spices and pipe tobacco, while upon aeration, nuances of leather, graphite, and a hint of undergrowth emerge. On the palate, it is powerful and structured, with vigorous yet refined tannins supporting a full and enveloping body. The flavor profile reveals layers of dark fruit, black pepper, cloves, and a distinctive iron-rich mineral note. The finish is monumental and persistent, with a long aftertaste of dark fruit and spice. Excellent with robust Georgian dishes (mtsvadi, marinated meat skewers, and kharcho, a spicy beef, rice, and walnut soup), as well as stewed or roasted game and aged cheeses.  and spicy, porcini mushroom-based dishes.

Pheasant's Tears – named after a Georgian saying that only the best wines are good enough to make a pheasant cry – was founded in 2007 by American painter John Wurdeman and Georgian winemaker Gela Patalishvili, with the aim of reviving Georgia's 8,000-year-old winemaking tradition. Production is based on the use of qvevri, the traditional buried clay amphorae used for fermentation and aging, and on organic and biodynamic viticulture methods, respecting the lunar cycles and using only natural preparations to care for the vines (some of which are centuries-old).
