Distilleries Xoriguer is one of the few in the world to produce gin using a wine base rather than grains, a tradition that dates back to the island's British rule in the 18th century (the distillery already existed then). The copper stills used have been the same since 1910 and are still heated by wood fires, specifically local olive wood. The distillery is located in the port of Mahón and uses sea air for cooling during distillation, which contributes to the gin's distinctive aromatic profile. It is one of only two gins in the world with a protected geographical designation.
