The Haymans are one of the few remaining independent distilling families in England, having been active since 1863. Their production process involves a 24-hour maceration of the botanicals in neutral alcohol before distillation, which takes place in a custom-built 450-litre "Christian Carl" copper still, using the traditional "two-day gin" approach.
