Caol Ila Distillery, founded in 1846, takes its name from its scenic location on the Sound of Islay (in Gaelic, Caol Ila actually means "Sound of Islay"), the narrow stretch of sea that separates Islay from the island of Jura. The distillery was completely rebuilt in 1974, but retained the same original still designs to preserve the distinctive flavor profile of its whisky. Unlike many other Islay whiskies, Caol Ila is distinguished by a more elegant and mature approach to peating, with more moderate phenol levels that allow for more subtle nuances to emerge (especially ripe fruit, aromatic herbs, and the distinctive marine touch). The 18-year ageing takes place primarily in American ex-bourbon casks.
