Artisanal mezcal produced by Carlos Moreno's family in collaboration with 62 producer families from 22 different communities in the state of Oaxaca, who cultivate agaves sustainably while promoting local biodiversity. The production uses wild agaves aged 7 to 25 years, authentic expressions of every tiny peculiarity of the plant and its terroir. The process follows traditional artisanal methods: cooking in underground stone ovens, grinding using a tahona (animal-powered stone mill), fermentation in wooden vats, and double distillation in copper or clay stills. Each bottle represents a specific terroir and a family of maestros, creating a living anthology of Mexican mezcal culture. Koch creates several styles: artisanal, ensemble (blends of different agaves), and ancestral with even more traditional methods.
