In the glass, it presents itself majestically, a deep purple hue that shifts toward garnet highlights. The bouquet unfolds from hints of wild berries to evolving into seductive notes of vanilla and bitter cocoa, with balsamic nuances. The palate reveals a flavor profile of rare elegance, powerful yet refined, supported by silky tannins and a balanced freshness. The ample finish concludes with a crescendo of spicy and fruity sensations. Excellent with elaborate red meats, such as fillet with green peppercorns, it reaches peaks of particular enjoyment with furred game and truffle-based dishes. It pairs remarkably well with blue and aged cheeses.
A wine that revolutionized the perception of Lazio reds, one of the first in Italy to be made with 100% Merlot grapes, born from winemaker Riccardo Cotarella's renowned love for this grape variety . The winemaking process follows a meticulous protocol: the grapes, harvested at perfect ripeness, are hand-selected. Fermentation takes place in temperature-controlled stainless steel tanks, with frequent pumping over for optimal polyphenolic extraction. Aged for 12 months in new French oak barriques, followed by a further period of bottle aging.
