Description:
A deep ruby red in the glass, it reveals notes of ripe black cherry, plum, Mediterranean herbs, and a warm spicy undertone. On the palate, it is intense and supple, with distinct dark fruit, velvety tannins, and a warm, persistent finish. The slight drying of the grapes and the aging on the skins lend body and density, without compromising balance.
Perfect with stewed meats, roasts, and feathered game, but also with rich pasta dishes like pappardelle with hare ragù. Try it with aged, washed-rind cheeses.
The grapes are left to dry slightly on the vine before harvesting and are carefully selected before being vinified in two stages, with several days of maceration on the skins to maximize color, structure, and fine tannins. The vineyards grow on the mineral-rich volcanic soils of the Castelli Romani area, where L'Olivella has been organically cultivating 12 hectares of vineyards since 1986. The result is a characterful red wine that perfectly expresses the identity of the Cesanese grape and the passion for promoting the native varieties of the Lazio region.
