Description:
A delightful wine with a bright golden yellow color, it expresses the unmistakable aromatic signature of Moscato Giallo on the nose, enriched with hints of apricot, ripe peach, honey, and delicate notes of vanilla. On the palate, it stands out for its elegant balance between the high residual sugar of 50 g/l and a lively acidity that lends freshness and dynamism, making it refined and persistent without being opulent. Perfect paired with almond-based pastries, lightly marbled cheeses, and foie gras, this wine has an aging potential of 20 years, representing a refined expression of Bergamo's winemaking tradition.
Manuel Biava grows grapes in the Cornone vineyard in Scanzorosciate, where the terraces of Mount Bastia enjoy a privileged microclimate and calcareous alluvial soils at 300 meters above sea level. Adopting an environmentally friendly approach on just 3 hectares of property, the winery produces this passito through a meticulous process: the Guyot-trained grapes are left to dry for months on outdoor racks, then vinified in February with a brief 24-hour maceration. This is followed by slow fermentation until spontaneously stopped at 15% alcohol, thus preserving the natural residual sugar.
