Description:
Straw yellow in color with golden highlights, this classic method pas dosé sparkling wine presents a distinct minerality typical of high-altitude soils, accompanied by fresh, savory notes. On the palate, it is elegant and persistent, with a lively acidity that provides balance and a pleasant mineral flavor. The perlage is fine and persistent, and pairs magnificently with appetizers of cured meats and pecorino cheeses from the Marche region, pasta dishes with black truffle from the Sibillini Mountains, lake fish such as trout, crustaceans, and molluscs. It is perfect with Marche flaky crescia and traditional mountain dishes such as grilled lamb and aged mountain cheeses.
Coppacchioli Tattini was founded in 2016 from the desire to honor and enhance the traditions of the Marche hinterland, reclaiming a region repeatedly devastated by earthquakes. The winery is dedicated to the rediscovery of a centuries-old Pecorino/Vissanello grape variety, native to the village of Cupi di Visso, located 1,000 meters above sea level. Its distinctive feature lies in its heroic mountain viticulture practiced in extreme conditions: closed-chain production with all steps entirely by hand, natural fermentation, and sparkling wine production using the classic method.
