Description:
A vibrant, brilliant, and deep ruby red in color, it presents a clean and clear nose with delicate spicy notes, intense aromas of violet, sage, quince, plum, pepper, and olive wood. On the palate, it has a precise and refined texture, with well-defined, firm yet well-balanced tannins. It is savory, harmonious, and elegant, with excellent depth and a lingering finish. It pairs perfectly with cured meats and fresh cheeses, first courses like risotto and fresh pasta, roasted white meats, and poultry. Excellent with Garda specialties such as roasted saddle of rabbit with savory sauce and morel and liver ragù, polenta, and local cheeses.
The Groppello Gentile grape, with its characteristically tight bunches, very small berries, and noticeably thin and fragile skin, is undoubtedly the most iconic grape of the entire Garda Riviera. Cultivated since Roman times in the renowned Valtènesi region, where the Costaripa winery has been devoted to the land and its fruits for three generations, Mattia Vezzola, grandfather and founder of Costaripa wines, opened his own winery in Moniga del Garda, first dedicating himself to promoting the quality of his products. The tradition was then continued by his sons Bruno and Franco, and by his grandson Mattia, who brought with him the experience he gained in Champagne, developing a unique approach to winemaking and redefining the concept of rosé. Valtènesi is a moraine amphitheater with 67 different soil types, giving the wines a fine texture and surprising flavor. Castelline is vinified as a red wine using the most traditional method: manual harvesting with on-the-vine selection, followed by regular fermentation with prolonged maceration on the skins to achieve elegance and refined flavors. Approximately 35% of the wine ages in small, old 228-liter white oak barrels for approximately 12 months.
