A deep ruby ​​red in color with garnet highlights that reflect its impressive structure, the nose unfolds an ethereal and enveloping bouquet of great charm, where notes of ripe fruit intertwine with hints of roasted coffee, evolving into more intense sensations of dark chocolate and sweet spices. On the palate, it presents a sumptuous structure that captivates with elegance and power, characterized by a velvety texture and perfectly integrated ripe tannins that impart complexity without being aggressive. The remarkable concentration is balanced by a freshness that keeps the wine lively, culminating in a long and persistent finish of remarkable intensity. An ideal wine for red meat dishes such as braised meats, game, and roasts, it is also an interesting meditation wine at the end of a meal, magnificent when paired with very mature hard cheeses.

The Olivini winery has masterfully interpreted the Merlot grape variety in the unique microclimate of Brescia's Garda area, where lake breezes and a privileged exposure create ideal conditions for maturation. This wine represents one of the most ambitious expressions of the company's production, obtained exclusively from selected Merlot grapes from the most suitable vineyards. Vinification involves manual harvesting and prolonged maceration to extract color, aromas, and noble tannins, followed by alcoholic fermentation with selected yeasts and complete malolactic fermentation, which softens the structure. The lengthy aging process of approximately 24 months in the cellar, followed by bottle aging, gives the wine great longevity and a distinctive identity, creating a characterful product suitable for the finest occasions.
