Description:
In the glass, it displays a beautiful, intense coral pink color, with a fragrant bouquet rich in nuances of flowers and red fruits, particularly roses, strawberries, black cherries, and raspberries, along with herbaceous notes. On the palate, it is agile, drinkable, and fresh, ideal for pairing with charcuterie boards and vegetarian appetizers, but also excellent throughout the meal, especially with pizza.
From a blend of white and red grapes, the former planted in 1986 and the latter in 2009, grown on mineral-rich clay-limestone soils and managed according to the principles of organic farming and the ancestral method, a wine that harks back to the peasant tradition whereby, having paid off the debts accumulated during the year with the harvested grapes, the farmer had no choice but to work together the few remaining rows of white and red grapes (hence the origins of the Pagadebit grape variety in Romagna). The manual harvest is followed by spontaneous alcoholic fermentation in stainless steel and secondary fermentation in the bottle without the addition of sugars or sulfites, clarification, filtration, or any other corrections.
