Description:
Bright pink with a fine and persistent perlage, the nose offers an intense and fragrant profile of wildflowers and fresh red fruits. On the palate, it is lively and decisive, with a marked freshness that combines with remarkable savory flavors. The palate is crisp, with a pleasant mineral finish and a pleasant finish. Ideal as an aperitif or with finger foods. It pairs perfectly with fried fish or vegetables, fresh fish appetizers, cured meats, and mild cheeses. It also pairs well with grilled white meats and light Piedmontese dishes.
La Chimera is a tiny winery in the Susa Valley, managed since 2005 by agricultural expert Stefano Turbil. It's a precious example of heroic viticulture: the vineyards are located at 750 meters above sea level on stony, poor soils, with slopes requiring terraces supported by dry stone walls. The winery has revived ancient native grape varieties over 80 years old, including Avanà, now almost entirely abandoned in Piedmont.
Production follows strict organic principles, avoiding chemical additives in the vineyard and sulfur dioxide in the cellar. Eos is produced using the Ancestral Method: after manual harvesting, the must ferments spontaneously with indigenous yeasts in stainless steel tanks. Before fermentation is complete, it is bottled to complete the secondary fermentation process thanks to the naturally present residual sugars, without disgorgement.
