Phoebus is a deep and charismatic red, inspired by the sun god: A deep purple red, it releases bold spicy aromas on the nose, with hints of cinnamon, tobacco, dark chocolate, and a hint of vanilla. The color is cloudy, deliberately unfiltered, while the palate offers a full structure and vigorous yet well-blended tannins, supported by lively acidity and a dry, persistent finish.
Ideal with red meats, game, roasts, but also important first courses and mature cheeses.
