Description:
An intense ruby red color with purple highlights, it opens with an aromatic bouquet of ripe red fruits, with notes of blackberry and cherry tinged with subtle floral and slightly spicy notes. On the palate, it is soft and enveloping, with a substantial yet balanced structure, supported by velvety tannins and a pleasant freshness. The finish is persistent, with a return of fruity and spicy notes. Ideal with traditional Apulian dishes such as orecchiette with turnip greens and horse brasciole, it also pairs beautifully with grilled meats, semi-mature cheeses, and mushroom-based dishes. It pairs well with traditional Salento red fish dishes.
The Felline winery, led by Gregory Perrucci in the heart of Salento, stands out for its dedication to native grape varieties and its sustainable approach to viticulture. The vineyards, some of which are ungrafted, are cultivated using traditional methods, fully respecting the ecosystem. Vinification involves manual harvesting in the early hours of the morning to preserve the freshness of the grapes. After gentle destemming, fermentation takes place in temperature-controlled stainless steel tanks for approximately 15 days. This is followed by a brief aging in second- and third-use French barriques for six months, which lends the wine complexity without overpowering the varietal characteristics.
