Irish whiskey proudly crafted using the traditional Single Pot Still method, using a blend of malted and unmalted barley, then aged for 12 years in a combination of American ex-bourbon casks and Spanish ex-sherry casks. Midleton is the only distillery in the world still using this quintessentially Irish method, developed in the 18th century as a response to the malt tax imposed by the British Crown. The distillery still uses the largest pot stills in the world, each with a capacity of 75,000 liters.
