Founded in 1884 in the town of Arucas, Gran Canaria, Arehucas is the oldest distillery in the Canary Islands and one of the most important in all of Spain, a key transit point in trade between Europe and the Americas and in the development of local rum production. Although today most of the molasses is imported from the Caribbean, the distillery maintains some sugarcane fields to preserve the ancient tradition of the 15th century, when the Spanish conquistadors introduced this crop to the archipelago. They also use their own strain of yeast, passed down over time, for fermentation. Distillation takes place in modern column stills, but follows traditional Spanish methods. The aging system is unique: the barrels, primarily ex-American bourbon and ex-Spanish sherry, are stored in warehouses located at different altitudes on the island, taking advantage of Gran Canaria's diverse microclimates to achieve unique aging profiles.
