A prestigious Peruvian company established in 1880, Santiago Queirolo produces this Pisco following strict traditional guidelines. Acholado is a blend of Quebranta (60%), Italia (30%), and Torontel (10%) grapes grown in the Ica Valley. Distillation takes place in copper stills using the unfiltered fermented must. The spirit is not aged, thus preserving the aromatic purity of the grapes. The nose presents floral and fruity notes with hints of citrus and raisins. On the palate, it is smooth and structured with a long, spicy finish.
