Description:
With a splendid golden hue edged with amber highlights, the nose presents an intense, Mediterranean balm of juniper, mastic, and mugwort, fresh and fragrant, captivating both nose and eye. On the palate, it reveals perfectly balanced structure, pulp, and acidity, with a complexity derived from the brief maceration on the skins and the nearly 60-year-old bush-trained vines. The finish is lingering, with hints of Sardinian scrub and the calcareous minerality of the hilly terroir. Ideal served with raw tuna and amberjack, mullet roe, fresh pecorino cheeses, fried mixed fish, and elaborate seafood appetizers. Perfect with Sardinian specialties such as culurgiones, malloreddus with sea urchins, Catalan-style lobster, and traditional seafood dishes from the island.
Dettori Bianco represents the purest expression of Vermentino according to Alessandro Dettori's biodynamic philosophy. The grapes come from nearly 60-year-old vines trained as bush vines on hilly, calcareous soil at 300 meters above sea level, where low yields guarantee concentration and complexity. This wine's distinctive feature lies in the brief maceration on the skins, which imparts structure and an amber color. This technique, uncommon for white wines, best expresses the potential of mature Vermentino here. Spontaneous fermentation occurs in concrete tanks, where the wine ages for several months before being bottled without fining or filtration, preserving the authenticity and expressive power of the Sardinian terroir.
