Description:
Ruby red in color with purple highlights, it presents an elegant and complex nose with notes of small black berries, violets, sweet spices, Mediterranean herbs, and a minerality typical of the Sardinian terroir. On the palate, it is balanced and harmonious, medium-bodied, with silky tannins, good structure, and a lingering finish with floral and spicy overtones. La Monica expresses its full potential here, demonstrating elegance and drinkability. It pairs beautifully with flavorful pasta dishes, grilled red meats, roast lamb, aged Sardinian cheeses, and cured meats from the island. Perfect with local specialties such as cordula with peas, wild boar stew, and traditional Sardinian pastoral dishes.
Chimbanta takes its name from Monica's vineyard, cultivated in the Badde Nigolosu cru, where Alessandro Dettori applies the principles of biodynamic agriculture. Like all the estate's wines, it is vinified without prior chemical analysis, following only instinct and handed-down experience. Fermentation occurs spontaneously in concrete tanks that allow for natural micro-oxygenation, without the addition of selected yeasts or acidity regulators. Aging continues in concrete, a material Dettori favors to preserve the authenticity of the terroir and the pure expression of this native variety.
