Description:
A deep ruby red with garnet highlights, it presents a complex and captivating bouquet on the nose with notes of ripe red fruits, plum, sweet spices, tobacco, leather, and an earthy minerality characteristic of the terroir. On the palate, it is structured and powerful, with firm yet well-integrated tannins, a rich texture, and a long, complex finish with balsamic and toasted notes. Pascale expresses its full personality as a rare and precious grape here, ideal with braised beef, furred game, richly flavored Sardinian cheeses, and cured meats. Excellent with traditional dishes such as roast lamb with potatoes, stewed wild boar, and rich island cuisine.
Pascale is an uncommon varietal that Alessandro Dettori decided to vinify as a single varietal at the Badde Nigolosu estate, applying the principles of biodynamics and natural agriculture and dedicating it to his grandfather, who was born on March 8th. Vinification takes place in concrete tanks with spontaneous fermentation, without the use of selected yeasts, preservatives, or correctors. Extended aging in concrete allows the wine to develop complexity while maintaining its varietal and territorial authenticity.
