Description:
It features an intense ruby red color with purple highlights. On the nose, notes of ripe red fruits such as blackberry, cherry, and plum are followed by delicate spicy nuances and hints of Mediterranean scrub and leather. On the palate, it is well-structured, with silky tannins supporting the freshness and balancing the alcohol. The finish is persistent, with a return of red fruits and a light mineral note. Ideal with hearty traditional Sardinian dishes, such as malloreddus alla campidanese or culurgiones, roast pork and lamb, it also pairs well with aged cheeses and game.
Founded in 1960 as a cooperative of producers in Sulcis, in the southwest of the island, Cantina Santadi is today one of the most important and renowned wineries in Sardinia, particularly for its revitalization of the native Carignano grape. Thanks to the area's particularly sandy soils, it is still grown ungrafted, having resisted phylloxera. After malolactic fermentation in stainless steel, during which frequent pumping over is performed to promote the extraction of color and tannins, the wine is aged for six months in stainless steel tanks and then in bottle for at least three months before release. The expertise of oenologist Giacomo Tachis has contributed significantly to the winery's qualitative evolution.
