Description:
It has a pink color with salmon highlights and a broad and complex bouquet, with initial notes of red fruits and wild strawberries, followed by elegant hints of sweet spices such as cinnamon and cloves. On the palate, it is full and enveloping, medium-bodied, medium-lingering, and very drinkable. Excellent paired with fish appetizers, vegetable or fish-based first courses, grilled or stewed fish, poultry, and delicate white meats.
Founded in 1960 as a cooperative of producers in Sulcis, in the southwest of the island, Cantina Santadi is today one of the most important and renowned wineries in Sardinia, especially for its revitalization of native grape varieties such as Carignano, which is still grown ungrafted here, having survived the devastating phylloxera epidemic. Malolactic fermentation in stainless steel is followed by 12 months of fermentation in second- and third-use French oak barrels, which enhance the wine's complexity without overshadowing its varietal characteristics. It then ages in bottle for at least six months before release.
