Description:

It features a brilliant straw yellow color with lively greenish highlights. On the nose, notes of white flowers such as hawthorn and jasmine are followed by hints of yellow fruit, particularly peach and apricot. As it ages in the glass, aromas of Mediterranean herbs and a distinctive saline minerality develop. On the palate, it is fresh and savory, with a medium structure and well-balanced acidity that lends vivacity to the sip. The flavor faithfully reflects the aromas, with a predominance of fruity and floral notes, enriched by a pleasant citrus vein and a characteristic almond note on the finish. It has a remarkable persistence, with a long and refreshing aftertaste that invites you to try the next glass. Perfect as an aperitif, it pairs magnificently with seafood appetizers, especially shellfish and raw seafood. Ideal with seafood first courses such as fregula with seafood or spaghetti with clams, but also with grilled or baked fish, fresh cheeses, and light white meats.

Founded in 1960 as a cooperative of producers in Sulcis, in the southwest of the island, Cantina Santadi is today one of the most important and renowned wineries in Sardinia, especially for its ability to interpret and enhance the island's native grape varieties. In addition to the renowned Carignano, Santadi has also successfully enhanced the potential of Vermentino, the quintessential Sardinian white grape: the free-run must is fermented in stainless steel tanks for approximately 15 days at low temperatures, preserving the varietal aromas and the grape's characteristic freshness. The wine is then aged on the fine lees for several months, with periodic bâtonnage (stirring) that contributes to its complexity and structure.
