Description:
A beautiful ruby red, it reveals aromas of cherries in alcohol, aromas of Mediterranean flowers and herbs, and hints of graphite. On the palate, it is fresh, savory, full-bodied, balanced, and pleasantly persistent. It pairs excellently with red meats, game, rice sartù, and fresh and aged cheeses.
A single-varietal of the quintessential Sardinian grape, produced with minimal intervention and organic farming, from a 15-year-old vineyard on granite weathering soil in the Gulf of Orosei, still plowed by oxen because it's too narrow for a tractor. This wine is also under the watchful eye of Simone Sedilesu, a passionate winemaker born in Mamoiada and raised among the vines with his grandfather and father, who taught him the basics of the trade (before graduating in oenology). He is a staunch believer in the theory that wine is made in the vineyard and only guided in the cellar. Vinification and aging take place in stainless steel.
