Description:
It presents itself in the glass with an intense ruby red color. On the nose, it releases a distinctive blend of ripe red plum, orange peel, honey, and floral notes, which over time give way to subtle notes of red fruits, cocoa, coffee, and a vague hint of game . On the palate, it is dry and dense, balanced in structure and acidity, and allows fruity tones to emerge along with delicate aromas of tar and beeswax, culminating in a vigorous and very persistent finish.
A single-varietal blend of the quintessential Sardinian grape, cultivated with minimal intervention and organic methods, from a vineyard over a century old on granite weathering soil in the Gulf of Orosei, still plowed by oxen because it's too narrow for tractors. It's also under the watchful eye of Simone Sedilesu, a passionate winemaker born in Mamoiada and raised among the vines with his grandfather and father, who taught him the basics of the trade (before graduating in oenology). He's also a staunch believer in the theory that wine is made in the vineyard and only guided in the cellar. After two years of aging in oak barrels, it's filtered and bottled, without fining or sulfites, in approximately two thousand numbered bottles.
