Description:

Ruby-cherry red, the nose reveals fresh notes of violet and morello cherry, with delicate nuances of red fruit and a touch of spice. On the palate, it is fresh and dynamic, with fine, enveloping tannins typical of the grape and a modest lactic acidity. The finish is clean and pleasantly fruity. Versatile, it pairs well with appetizers, Sicilian first courses, white meats, and fresh cheeses. Also excellent with gourmet pizza and Mediterranean dishes.

This pure Nerello Mascalese represents a more immediate and accessible interpretation of the grape variety than the Etna Rosso. These native grapes are grown as single bush vines on the rich volcanic soils of Etna, at approximately 400 meters above sea level, according to organic farming principles. After manual harvesting, two-thirds of the grapes are destemmed and crushed, while one-third is placed in the vat as a whole bunch, which will then be the source of the second stage of alcoholic fermentation following racking. Malolactic fermentation and aging are carried out exclusively in stainless steel to ensure freshness and aromatic complexity.
