Description:
Bright straw yellow in color with golden highlights, it features a fine and persistent perlage and opens on the nose with a delicate and complex bouquet that perfectly expresses the varietal characteristics of Ribolla Gialla, with notes of perfectly ripe grapes accompanied by subtle hints of yeast that testify to the long aging process. On the palate, it maintains the same delicate refinement but also reveals a decisive character, with a balanced structure that culminates in a pleasant and lingering aftertaste. Ideal as a shellfish aperitif, it pairs perfectly with fish, delicate white meats, and fresh cheeses.
Born from the union of two young producers, Robert Prinčič of Giasbana (Gradis'ciutta) and Matia Četrtič of Kojsko (Ferdinand), this sparkling wine represents the crossing of the historical boundaries between Slovenian Brda and Italian Collio. The "Sinefinis" project uses Ribolla Gialla, a grape variety with a thousand-year history linked to Collio and which in the 1990s accounted for less than 1% of all Friulian DOC white wines following the phylloxera crisis of the 19th century. The terroir is characterized by the famous "ponca," composed of friable marl and stratified sandstone blocks of Eocene origin that formed the ancient seabed, formed 65 million years ago when the hills were below sea level. This unique soil unites five appellations in Italy and Slovenia, enabling the European "zone C2" classification, which allows the vinifying of grapes from both sides of the border. The winemaking process follows the classic method, with sparkling wine production and aging on the lees for at least 18 months, preserving the characteristics of this ancient terroir and the historic grape variety currently being rediscovered.
